Kale and Black Bean Stuffed Sweet Potatoes

This simple recipe is one of my absolute favorites. Sweet potatoes are already in my top five favorite foods, but combined with the garlicy kale, savory black beans, and creamy avocado sauce- it is absolutely delicious!

Stuffed Sweet Potato Recipe

  • 4 medium sweet potatoes
  • 1 clove garlic, minced
  • 5 cups chopped kale
  • Salt and pepper to taste
  • 1 can black beans
  1. Using a fork or knife, poke multiple holes into the sweet potatoes. Place potatoes in microwave for about ten minutes, until tender
  2. In the meantime, heat some vegetable broth or water (you can also use oil) over medium-high heat in medium saucepan. Add garlic and cook for 60 seconds, or until fragrant. Add kale and toss to coat. Reduce heat to low, and cook for another 10-15 minutes, or until kale is desired texture, adding more water as needed. Season with salt and pepper to taste.
  3. Cut sweet potatoes in half, length wise, and top with kale and beans. 

Creamy Avocado Sauce

  • 1 garlic clove
  • 1 1/2  avocados
  • 1/4 cup Extra Virgin Olive Oil
  • 1/3 cup water
  • 3/4 cup packed basil leaves
  • 1/4 cup chopped parsley
  • 1/4 cup chopped chives
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  1. In a food processor or high-speed blender, blend together all ingredients until smooth and creamy.
